Soups

This one's for you Kylie! Here are two of my favorite soups. They're super easy and very yummy, especially since the weather is getting chillier.


Homemade Chicken Noodle Soup

2 quarts chicken stock
2 tsp. chicken soup base
2 cups chopped celery
1 cup chopped onion
2 cups chopped carrots
2-3 cups noodles (any kind you want)
1 cup frozen green peas
1 can of cream of chicken soup
2 cups cooked chicken (I like it shredded but it can also be chopped)
1 can of broth
salt & pepper to taste

Heat chicken soup base, stock, carrots, celery and onions together. Bring to a boil and add noodles. Cook until veggies and noodles are tender. Add peas and cook for 2-3 minutes. Stir in cream of chicken soup, can of broth and chicken. Season with salt & pepper.

Homemade Chicken Stock:

Chicken breasts cut into pieces
4 ribs of celery cut in 3 in. pieces
3 carrots (or baby carrots) in 3 in. pieces
1 medium onion quartered
1 tsp. salt
8 cloves

Put 1 clove in ends of each onion piece. Combine all ingredients in a large pan and cover with cold water. Bring to a boil slowly and simmer just unil chicken is no longer pink when cut with a knife. Do not overcook or chicken will be dry. Remove from heat and strain stock from chicken and veggies. Shred/chop chicken and save for use in soup.

*This recipe makes a lot, so you may want to half it.


Super Easy Taco Soup

Hamburger, cooked
1 can black beans
1 can tomato soup
1 can stewed tomatoes (is also very yummy with fresh tomatoes!)
1 can corn
1 can french-style green beans
1 envelope dry taco seasoning

*I have never tried it but it would be yummy to saute onions with the hamburger.

Mix together. Warm on the stove. Top with fritos, cheese, sour cream and cilantro!

*This is the easiest soup EVER! Great for cold days and days when you don't feel like cooking. And it tastes even better as left overs. You should know that this recipe makes TONS, so you may want to modify it according to how much you need/want but then again, it's great for leftovers.

Also, if anyone reads this, I forgot to mention that you need to drain & rinse the black beans before you put them in the soup.
